2 TL  Senf, mittelscharfer

3 TL  Zucker

100 ml  Gurkenflüssigkeit

50 ml  Weißweinessig

½ Bund  Frühlingszwiebel(n) oder Schnittlauch

Die Kartoffeln mit 1 EL Salz und 1 EL Kümmel kochen. Abgießen, abschrecken, etwas abkühlen lassen und lauwarm pellen.

In der Zwischenzeit Senf, Zucker, Gurkenwasser, Essig, Öl, etwas Salz und kräftig Pfeffer sowie die ganz fein gehackte Zwiebel (und falls man mag, auch den Knoblauch) in ein großes, verschließbares Glas geben und durch kräftiges Schütteln eine Vinaigrette-Emulsion herstellen.

Den Apfel schälen und in kleine Stücke schneiden, die Gurke in Scheiben schneiden, ebenso die lauwarmen Pellkartoffeln.

In eine große Schüssel immer abwechselnd Pellkartoffelscheiben, Gurke und Apfel und jeweils zwischen die Schichten ein paar Löffel von der Vinaigrette und noch etwas Pfeffer und Salz geben.

Am Schluss sollte es so sein, dass etwas zu viel Marinade im Salat steht. Der Salat sollte unbedingt mindestens 3 – 4 Stunden, besser noch über Nacht, durchziehen. Während dieser Zeit wird die Marinade vom Salat völlig aufgenommen und die Kartoffeln schmecken dadurch sehr saftig und werden nicht matschig. Danach gut mischen.

Kurz vor dem Servieren den Schnittlauch oder die Frühlingszwiebeln in kleine Röllchen schneiden und unter den Salat heben.
